Gluten-Free Chocolate Cupcakes

Today I made a chocolate dessert for a special occasion. It’s so delicious that you could make it for everyday sweets too because it is almost like a muffin. Fun fact: I made these cupcakes on one of my family member’s birthday! Ever since March, my family and I have been making most of our own food because of  COVID-19, especially for birthday celebrations. On one hand it’s a bummer that we can not have big parties. On the other hand, I’ve enjoyed learning how to cook and bake.

Making this recipe was fun. Eating it was a really good surprise because it was our first time making these and they tasted so good. You would probably love these chocolate cupcakes a lot too (believe me they taste better than most gluten-free cupcakes).

Ingredients

  • 1 cup all-purpose gluten-free flour
  • 1/4 teaspoon xanthan gum (leave out if your flour already has it)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder (check if gluten-free if this is important to you)
  • 1/2 teaspoon of salt
  • Optional (but recommended): 1/4 teaspoon ground cinnamon
  • 1/4 cup coconut oil
  • 1/2 cup granulated sugar (little more if sweet is your thing)
  • 1/2 cup of almond milk (we used chocolate almond milk; you could try with any milk you have in fridge)
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1/3 of a cup of cacao powder (if you use cocoa power, you may want to adjust the sugar)
  • 1/3 of a cup of near boiling water
  • A few pieces of chocolate to add to the top in place of frosting

Instructions

  • Preheat your oven to 350°F
  • Line muffin pan with liners or grease pan
  • Add all your dry ingredients together in one bowl
  • Add all your wet ingredients together in another bowl
  • Add the wet ingredients into the dry bowl slowly, mixing along the way
  • If too dry, add another splash of milk
  • Add batter into muffin pan
  • Add a few pieces of chocolate to the top of each cupcake and push down a little
  • Bake cupcakes for 25 minutes at 350°F. All ovens and altitudes are different so the time may vary.
  • Remove when done and let cool. If available, you can use a baking cooling rack.
